Puglia Burrata Neapolitan Pizza

Here's a recipe for Burrata Neapolitan Pizza:
Ingredients:

For the pizza dough:
- 2 1/4 teaspoons Caputo Instant Yeast
- 1 1/2 cups warm water (145°C)
- 4 cups Caputo Pizzeria flour, plus extra for dusting
- 1 teaspoon granulated sugar
- 1 1/2 teaspoons salt
- 2 tablespoons Colavita extra virgin olive oil

For the toppings:
- 1 ball of Puglia burrata cheese
- 1 cup Ciao Passata
- Fresh basil leaves
- Colavita Extra virgin olive oil
- Salt and pepper to taste

Instructions:

1. Prepare the pizza dough:
- In a small bowl, combine the warm water, yeast, and sugar. Let it sit for about 5-10 minutes until foamy.
- In a large mixing bowl or the bowl of a stand mixer fitted with a dough hook, combine the flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface or with the stand mixer for about 5-7 minutes until it's smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours or until doubled in size.

2. Preheat your oven to the highest temperature it can go (usually around 260-290°C). If you have a pizza stone, place it in the oven during preheating.

3. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion out on a lightly floured surface into a circle or oval shape, about 1/4 inch thick.

4. Place the rolled-out dough onto a pizza peel or parchment paper.

5. Spread a layer of tomato sauce evenly over the dough, leaving a border around the edges for the crust.

6. Tear the burrata cheese into pieces and distribute them evenly over the tomato sauce.

7. Transfer the pizza to the preheated oven, either directly onto the pizza stone or onto a baking sheet if you're using parchment paper.

8. Bake the pizza for 8-10 minutes, or until the crust is golden brown and the cheese is melted and bubbly.

9. Remove the pizza from the oven and immediately sprinkle fresh basil leaves over the top. Drizzle with extra virgin olive oil, and season with salt and pepper to taste.
